A longtime Lyonnais tradition, the mâchon is a convivial meal usually served in the morning featuring hearty charcuterie and other classic dishes, all washed down with lots of Rhône wine. Originally served to Lyon’s silk workers coming off the night shift, the mâchon is now more of a pastime for lovers of Lyon’s beloved gastronomic tradition. La Tablée is thrilled to recreate a mâchon with Chef Andrew Carmellini and the cuisine of Lafayette, his love letter to France’s grand cafés. Winemakers Nelly & Arnaud Boel, Thibaud Capellaro, Yves Cuilleron, François Villard, Isabel & Guillemette Ferrando, Paul Fumoso of Gour de Chaule, Romain Aujoulat of Château La Nerthe, James Barruol of Château de Saint Cosme, and Emmanuelle Verset of Alain Verset will pour wines that will perfectly complement Chef Carmellini’s refined and soulful cuisine.
